  • 2 chicken breasts, boneless and skinless
  • 6 cups chicken broth
  • 2 medium carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup egg noodles
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onions and garlic, sauté until translucent.
  2. Add sliced carrots and celery; cook for 5 minutes until slightly softened.
  3. Pour in chicken broth and bring to a boil.
  4. Add chicken breasts to the pot, reduce heat and simmer for 20 minutes until chicken is cooked through.
  5. Remove chicken breasts and shred them with two forks.
  6. Add egg noodles, shredded chicken, salt, pepper, and dried thyme to the pot.
  7. Simmer for another 8-10 minutes until noodles are tender.
  8. Adjust seasoning to taste and serve hot.

Notes

For extra flavor, garnish with fresh parsley or a squeeze of lemon juice. You can also substitute egg noodles with your favorite pasta type.
