Cheesy Potato Skins

These cheesy potato skins are crispy, flavorful, and perfect for a party appetizer or snack. Loaded with cheddar cheese, bacon, and green onions, they’re sure to be a crowd-pleaser!

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup chopped green onions
  • Sour cream, for serving (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes clean and pat dry.
  2. Rub potatoes with olive oil and sprinkle with salt and pepper.
  3. Bake for 45-60 minutes, or until potatoes are tender.
  4. Let potatoes cool slightly, then cut them in half lengthwise. Scoop out the potato pulp, leaving about 1/4 inch of potato inside the skin. Save the potato pulp for another use.
  5. Place potato skins on a baking sheet and sprinkle with cheddar cheese and bacon.
  6. Bake for 5-10 minutes, or until cheese is melted and bubbly.
  7. Top with green onions and serve immediately with sour cream, if desired.

Notes

For extra flavor, try adding a sprinkle of garlic powder or onion powder to the potato skins before baking. Serve with your favorite dipping sauce, like ranch dressing or BBQ sauce.
