  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups diced potatoes
  • 4 cups beef broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional toppings: shredded cheese, green onions, sour cream

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  3. Stir in the diced potatoes and beef broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  4. In a separate small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes to create a roux.
  5. Gradually whisk in the milk and heavy cream until smooth. Cook, stirring constantly, until the sauce thickens slightly.
  6. Reduce heat to low and stir in the softened cream cheese until melted and smooth. Add the cheddar cheese and stir until melted and smooth.
  7. Pour the cheese sauce into the pot with the ground beef and potatoes. Stir to combine.
  8. Season with salt and pepper to taste.
  9. Simmer for another 5-10 minutes to allow the flavors to meld.
  10. Serve hot, garnished with your favorite toppings.

Notes

For a richer flavor, use a combination of cheddar and Monterey Jack cheese. Serve with crusty bread or grilled cheese sandwiches for a complete meal.
