Cheesy Funeral Potatoes

Cheesy Funeral Potatoes are a comforting baked casserole featuring creamy potatoes, melted cheese, and a crunchy topping, perfect for gatherings and potlucks.

  • 1 (30 oz) bag frozen shredded hash brown potatoes, thawed
  • 2 cups shredded sharp cheddar cheese
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1/2 cup chopped onions
  • 2 cups cornflakes, crushed
  • 2 tablespoons melted butter (for topping)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, combine thawed hash browns, 2 cups cheddar cheese, cream of chicken soup, sour cream, 1/2 cup melted butter, chopped onions, salt, and pepper. Mix well.
  3. Pour the mixture into the prepared baking dish and spread evenly.
  4. In a separate bowl, mix crushed cornflakes with 2 tablespoons melted butter. Sprinkle this mixture evenly over the potato mixture.
  5. Bake uncovered for 45 minutes, or until the top is golden brown and the casserole is bubbly.
  6. Let cool for 5 minutes before serving. Enjoy!

Notes

For a vegetarian version, replace cream of chicken soup with cream of mushroom soup. Add cooked bacon or ham for extra flavor.
