  • 2 lbs Yukon Gold potatoes, peeled and thinly sliced
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Gruyere cheese

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  3. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
  4. Reduce heat and simmer for 5 minutes, or until sauce has thickened slightly.
  5. Stir in salt, pepper, and nutmeg. Remove from heat.
  6. Stir in 1 1/2 cups cheddar cheese and 3/4 cup Gruyere cheese until melted and smooth.
  7. Layer half of the potato slices in the prepared baking dish. Pour half of the cheese sauce over the potatoes.
  8. Repeat layers with remaining potatoes and cheese sauce.
  9. Top with remaining cheddar and Gruyere cheese.
  10. Bake for 50-60 minutes, or until potatoes are tender and cheese is golden brown and bubbly.
  11. Let stand for 10 minutes before serving.

Notes

For a richer flavor, use heavy cream instead of milk. Garnish with fresh parsley before serving, if desired.
