A comforting and nutritious carrot and celery soup that’s easy to prepare, perfect for a light lunch or starter. This wholesome soup combines the natural sweetness of carrots with the fresh, aromatic taste of celery.

Ingredients

  • 4 large carrots, peeled and chopped
  • 3 stalks celery, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic; sauté until softened and fragrant, about 5 minutes.
  3. Add chopped carrots and celery; cook for another 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes until vegetables are tender.
  5. Using an immersion blender, puree the soup until smooth. Alternatively, transfer in batches to a blender and blend carefully.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley if desired.

Notes

For a creamier texture, stir in a splash of coconut milk or cream before serving. This soup pairs well with crusty bread or a simple green salad.
