Caramelized Apple Samoas

Deliciously sweet and crispy Caramelized Apple Samoas combine tender apples with rich caramel and a crunchy cookie base for a perfect homemade treat.

  • 2 cups peeled, chopped apples (Granny Smith or Honeycrisp)
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 12 shortbread cookies or homemade cookie rounds
  • 1 cup shredded coconut, toasted
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  1. In a saucepan, combine chopped apples, brown sugar, butter, corn syrup, vanilla extract, and ground cinnamon.
  2. Cook over medium heat, stirring frequently until apples are tender and mixture thickens and caramelizes, about 10-12 minutes. Remove from heat and let cool slightly.
  3. Toast shredded coconut in a dry skillet over medium heat until golden brown, stirring constantly. Set aside.
  4. Spread a spoonful of the caramelized apple mixture evenly over each shortbread cookie.
  5. Sprinkle toasted coconut generously over the apple layer, pressing lightly to adhere.
  6. Melt chocolate chips with vegetable oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  7. Dip half of each cookie into melted chocolate or drizzle the chocolate over the top.
  8. Place cookies on parchment paper and refrigerate until chocolate sets, about 20 minutes.
  9. Serve chilled or at room temperature.

Notes

For an extra indulgent twist, drizzle some white chocolate over the finished Samoas or serve with a scoop of vanilla ice cream.
