  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • For the Cheesecake Filling:
  • 2 (8 ounce) packages cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • For the Apple Topping:
  • 2 medium apples, peeled and diced
  • 2 tablespoons unsalted butter
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup caramel sauce, plus more for drizzling

Instructions

  1. Prepare the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a 9×13 inch baking pan.
  2. Bake the Crust: Bake crust for 8-10 minutes, or until lightly golden. Let cool slightly.
  3. Make the Cheesecake Filling: In a large bowl, beat cream cheese and sugar until smooth. Beat in vanilla extract, then add eggs one at a time, mixing until just combined.
  4. Prepare the Apple Topping: While the crust is baking, melt butter in a skillet over medium heat. Add diced apples, brown sugar, and cinnamon. Cook for 5-7 minutes, or until apples are softened. Stir in 1/4 cup caramel sauce.
  5. Assemble and Bake: Pour cheesecake filling over the cooled crust. Spread apple topping evenly over the cheesecake filling.
  6. Bake: Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
  7. Cool and Chill: Let cool completely in the pan, then refrigerate for at least 2 hours before cutting into bars.
  8. Serve: Drizzle with additional caramel sauce before serving.

Notes

For an extra touch, sprinkle chopped pecans or walnuts over the caramel drizzle before serving. You can also use store-bought apple pie filling for a quicker option.
