Celebrate your birthday or any special occasion with this rich and decadent Capricorn Cake! This moist chocolate cake is layered with a creamy coffee buttercream frosting and topped with chocolate shavings for an unforgettable treat.

  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • For the Coffee Buttercream:
  • 1 cup (2 sticks) unsalted butter, softened
  • 3 cups powdered sugar
  • ¼ cup strong brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • For Garnish:
  • Chocolate shavings

Instructions

  1. Preheat and Prep: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine Dry Ingredients: In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients: In a separate bowl, combine buttermilk, oil, eggs, and vanilla extract.
  4. Combine Wet and Dry: Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Add Boiling Water: Carefully add the boiling water to the batter and mix until smooth. The batter will be thin.
  6. Bake: Pour batter evenly into the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool Cakes: Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  8. Make Coffee Buttercream: In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  9. Add Coffee and Vanilla: Gradually add the cooled coffee, vanilla extract, and salt. Mix until smooth and creamy.
  10. Assemble Cake: Once the cakes are completely cool, level the tops if necessary. Place one cake layer on a serving plate and spread with a generous amount of coffee buttercream.
  11. Layer and Frost: Top with the second cake layer and frost the entire cake with the remaining buttercream.
  12. Garnish: Decorate the cake with chocolate shavings.
  13. Chill (Optional): For easier slicing, chill the cake for at least 30 minutes before serving.

Notes

For a richer coffee flavor, add 1-2 teaspoons of instant espresso powder to the buttercream. This cake is best served chilled or at room temperature.
