Cajun Scalloped Potatoes combine tender sliced potatoes with a creamy, spicy sauce infused with bold Cajun seasonings, making a flavorful and comforting side dish.

  • 4 large potatoes, thinly sliced
  • 2 cups shredded sharp cheddar cheese
  • 1 cup milk
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 tablespoons all-purpose flour
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a saucepan, melt butter over medium heat. Add chopped onion and garlic, sauté until translucent.
  3. Stir in flour and cook for 1-2 minutes to form a roux.
  4. Gradually whisk in milk and heavy cream, cooking until the sauce thickens slightly.
  5. Add Cajun seasoning, smoked paprika, salt, and pepper. Stir well.
  6. Layer half of the sliced potatoes in the baking dish. Pour half of the sauce over the potatoes and sprinkle with half the cheese.
  7. Repeat with remaining potatoes, sauce, and cheese.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake an additional 15 minutes until golden and bubbly.
  10. Let it rest for 5 minutes before serving. Garnish with parsley if desired.

Notes

For extra heat, add a pinch of cayenne pepper to the sauce or top with sliced jalapeños before baking.
