  • 4 large potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 celery stalks, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 6 ounces Andouille sausage, sliced (optional)
  • 2 green onions, sliced for garnish
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, celery, green bell pepper, and garlic; sauté until softened, about 5 minutes.
  2. Add Andouille sausage slices and cook until browned, about 3-4 minutes (skip if vegetarian).
  3. Stir in diced potatoes, smoked paprika, cayenne pepper, thyme, oregano, salt, and black pepper; cook for 2 minutes to release flavors.
  4. Pour in chicken broth and bring the mixture to a boil. Reduce heat and simmer until potatoes are tender, about 20 minutes.
  5. Using a potato masher or immersion blender, partially mash the soup to desired consistency, leaving some potato chunks for texture.
  6. Stir in heavy cream and heat through without boiling, about 5 minutes.
  7. Adjust seasoning to taste. Serve hot, garnished with sliced green onions and shredded cheddar cheese if desired.
