Scale
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional for extra heat)
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. In a skillet over medium heat, melt the butter.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for another 30 seconds until fragrant.
  4. Stir in the Cajun seasoning, smoked paprika, and cayenne pepper; cook for 1 minute.
  5. Pour in the chicken broth and bring to a simmer, letting it reduce slightly for 2-3 minutes.
  6. Reduce heat to low and slowly add the heavy cream, stirring constantly.
  7. Simmer gently until the sauce thickens, about 5-7 minutes.
  8. Season with salt and black pepper to taste.
  9. Remove from heat and stir in fresh parsley if using.
  10. Serve immediately over your choice of seafood, chicken, or pasta.

Notes

For a richer flavor, try finishing the sauce with a splash of lemon juice or a sprinkle of grated Parmesan cheese.
