Butterscotch Heaven Pie

Indulge in the creamy, sweet delight of Butterscotch Heaven Pie. With a rich butterscotch filling and a buttery crust, this pie is pure comfort in every bite.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup melted butter
  • 1 cup packed brown sugar
  • 1/2 cup (1 stick) unsalted butter
  • 1/4 cup heavy cream
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 large egg yolks
  • Whipped cream, for serving
  • Butterscotch chips, for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch pie plate.
  3. Bake crust for 8-10 minutes, or until lightly golden. Let cool.
  4. In a medium saucepan, combine brown sugar, butter, heavy cream, milk, and salt. Cook over medium heat, stirring constantly, until butter is melted and sugar is dissolved. Bring to a simmer and cook for 1 minute, stirring constantly.
  5. Remove from heat. In a small bowl, whisk egg yolks. Slowly drizzle a small amount of the hot butterscotch mixture into the egg yolks, whisking constantly to temper them.
  6. Pour the tempered egg yolk mixture back into the saucepan with the remaining butterscotch mixture. Cook over low heat, stirring constantly, until thickened, about 2-3 minutes. Stir in vanilla extract.
  7. Pour the butterscotch filling into the prepared crust.
  8. Bake for 15-20 minutes, or until the filling is set but still slightly jiggly.
  9. Let cool completely before refrigerating for at least 2 hours.
  10. Serve chilled with whipped cream and butterscotch chips, if desired.

Notes

For an extra layer of flavor, sprinkle some sea salt on top of the pie before refrigerating. This complements the sweetness of the butterscotch perfectly!
