Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp butter
  • 1 tbsp oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 cup tomato puree
  • 1/2 cup heavy cream
  • 2 tsp garam masala

Instructions

  1. Heat oil and 1 tbsp butter in a large skillet over medium heat. Add chicken pieces and cook until lightly browned, about 5-7 minutes. Remove chicken and set aside.
  2. In the same skillet, add remaining butter. Sauté onions until soft and golden, about 5 minutes. Add garlic and ginger and cook for 1 minute more.
  3. Add garam masala, cumin, paprika, turmeric, chili powder, and salt; stir to combine and cook spices for 1 minute.
  4. Pour in the tomato puree and simmer for 8-10 minutes until sauce thickens.
  5. Return chicken to skillet, stir to coat with sauce, cover and simmer for 10 minutes until chicken is cooked through.
  6. Reduce heat to low, stir in heavy cream, and cook for another 2-3 minutes until heated through and creamy.
  7. Garnish with fresh cilantro and serve hot.
