  • 1 ½ cups graham cracker crumbs
  • 5 tbsp unsalted butter, melted
  • 3 tbsp brown sugar
  • 24 oz (680g) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 4 tbsp unsalted butter, browned and cooled
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions

  1. Preheat oven to 325°F (163°C). Prepare a 9-inch springform pan by greasing it.
  2. In a bowl, combine graham cracker crumbs, melted butter, and brown sugar until evenly moistened. Press firmly into the bottom of the pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese and granulated sugar until smooth and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in sour cream, browned butter, vanilla extract, and salt until fully incorporated.
  6. Pour the batter over the crust and smooth the top.
  7. Bake for 50–60 minutes, or until the center is almost set but still slightly jiggly.
  8. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour to cool gradually.
  9. Remove from oven and refrigerate for at least 4 hours or overnight before serving.

Notes

For best results, use high-quality unsalted butter and let the brown butter cool slightly before adding to the batter to avoid cooking the eggs.
