A Hearty Broccoli Cheese Rice Casserole

This Broccoli Cheese Rice Casserole is the ultimate comfort food! Creamy, cheesy, and packed with tender broccoli and fluffy rice, it’s a simple and satisfying side dish or main course.

  • 1 cup long-grain rice, uncooked
  • 2 cups chicken broth
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 cup milk
  • 1/2 cup mayonnaise
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 cups broccoli florets, cooked
  • 2 cups shredded cheddar cheese, divided
  • 1/4 cup bread crumbs
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a saucepan, combine rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed.
  3. In a large bowl, combine cooked rice, cream of mushroom soup, milk, mayonnaise, onion powder, garlic powder, and black pepper.
  4. Stir in cooked broccoli and 1 1/2 cups of the shredded cheddar cheese.
  5. Pour mixture into the prepared baking dish.
  6. In a small bowl, combine bread crumbs and melted butter. Sprinkle over the casserole.
  7. Top with the remaining 1/2 cup of cheddar cheese.
  8. Bake for 20-25 minutes, or until golden brown and bubbly.
  9. Let stand for 5-10 minutes before serving.

Notes

For a richer flavor, use sharp cheddar cheese. You can also add cooked ham or chicken to make it a complete meal.
