Breakfast Pop Tarts

These homemade Breakfast Pop Tarts are flaky, buttery pastries filled with your favorite jam—perfect for a quick, delicious morning treat.

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1/4 to 1/3 cup ice water
  • 1/2 cup fruit jam or preserves (any flavor)
  • 1 large egg, beaten (for egg wash)
  • Optional: powdered sugar glaze or sprinkles for topping

Instructions

  1. In a large bowl, whisk together flour, sugar, and salt.
  2. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
  3. Gradually add ice water, mixing until dough just comes together.
  4. Divide dough in half, shape into discs, wrap in plastic wrap, and refrigerate for 30 minutes.
  5. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  6. Roll out one dough disc to about 1/8 inch thickness and cut into rectangles (about 3×4 inches).
  7. Place a teaspoon of jam in the center of half of the rectangles, leaving edges clear.
  8. Brush edges with egg wash, then top with remaining rectangles and press edges with a fork to seal.
  9. Brush the tops with egg wash and cut small slits to vent steam.
  10. Bake for 20-25 minutes or until golden brown.
  11. Cool slightly before optionally drizzling with glaze or adding sprinkles.

Notes

For a fun twist, try different jam flavors or add a little cream cheese inside before baking for extra richness.
