Blueberry Thyme Chicken

A flavorful and healthy chicken dish featuring fresh blueberries and fragrant thyme, perfect for a delightful weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh blueberries
  • 2 teaspoons fresh thyme leaves
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1 tablespoon balsamic vinegar
  • Salt and pepper, to taste

Instructions

  1. Season chicken breasts with salt, pepper, and half of the thyme leaves.
  2. Heat olive oil in a skillet over medium heat and cook chicken until golden and cooked through, about 6-7 minutes per side. Remove chicken and set aside.
  3. In the same skillet, add garlic and sauté for 30 seconds until fragrant.
  4. Add blueberries, chicken broth, balsamic vinegar, and remaining thyme. Cook until blueberries start to burst and sauce thickens, about 5 minutes.
  5. Return chicken to skillet and spoon sauce over the top to warm through.
  6. Serve chicken topped with blueberry thyme sauce.

For extra flavor, serve with a side of roasted vegetables or creamy mashed potatoes.
