  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1/2 cup blackberry puree (from about 1 pint of blackberries)
  • 1 teaspoon red food coloring (optional, for deeper color)
  • For the Frosting:
  • 8 ounces cream cheese, softened
  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup blackberry puree
  • Black food coloring gel (optional, for gothic look)
  • Fresh blackberries, for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. In a small bowl, combine buttermilk, blackberry puree, and red food coloring (if using).
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk mixture, beginning and ending with the dry ingredients. Beat until just combined.
  6. Pour batter evenly into prepared pans.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cakes cool in pans for 10 minutes before inverting onto a wire rack to cool completely.
  9. For the Frosting: In a large bowl, beat together cream cheese and butter until smooth. Gradually add powdered sugar, beating until light and fluffy. Stir in blackberry puree and black food coloring gel (if using).
  10. Once cakes are completely cool, frost between layers and on top of the cake.
  11. Garnish with fresh blackberries.

Notes

For a richer flavor, add a tablespoon of blackberry liqueur to the frosting. Consider adding some edible silver leaf for a dramatic gothic effect.
