Luscious Berry Cheesecake Display

This Berry Cheesecake recipe is the perfect dessert for any occasion! Creamy, decadent cheesecake topped with a sweet and tangy berry compote.

  • 1 ½ cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar
  • 3 (8 ounce) packages cream cheese, softened
  • 1 ½ cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2 cups sour cream
  • 2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • ½ cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 tablespoons cornstarch

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese and 1 ½ cups sugar until smooth. Mix in vanilla. Add eggs one at a time, mixing until just combined. Stir in sour cream.
  4. Pour batter over crust.
  5. Bake for 55-65 minutes, or until center is almost set.
  6. Let cool completely in pan before refrigerating for at least 4 hours.
  7. While cheesecake is cooling, prepare the berry topping: In a medium saucepan, combine mixed berries, ½ cup sugar, lemon juice, and cornstarch. Bring to a boil over medium heat, stirring constantly. Reduce heat and simmer for 5-7 minutes, or until sauce has thickened.
  8. Let berry topping cool completely.
  9. Spoon berry topping over cheesecake before serving.

Notes

For a richer flavor, use full-fat cream cheese and sour cream. Serve chilled and enjoy!
