beef vegetable soup

A hearty and wholesome beef vegetable soup packed with tender beef chunks and fresh vegetables, perfect for a comforting meal any day.

Ingredients

  • 1 lb beef stew meat, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 medium potatoes, peeled and diced
  • 1 cup green beans, trimmed and cut
  • 1 cup corn kernels
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper, to taste
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add the beef and brown on all sides.
  2. Add chopped onion and garlic; sauté until fragrant and translucent.
  3. Add carrots, celery, potatoes, green beans, and corn to the pot; stir to combine.
  4. Pour in the beef broth and diced tomatoes with their juice.
  5. Add thyme, parsley, bay leaf, salt, and pepper.
  6. Bring the soup to a boil, then reduce heat to low and simmer, covered, for about 1 hour or until beef is tender.
  7. Remove the bay leaf and adjust seasoning if needed.
  8. Serve hot, garnished with fresh parsley if desired.

Notes

For extra flavor, add a splash of Worcestershire sauce before serving or serve with crusty bread for a complete meal.
