Beef and Macaroni Soup

Hearty and comforting, Beef and Macaroni Soup combines tender beef, macaroni pasta, and vegetables in a savory broth perfect for any season.

  • 1 lb ground beef
  • 1 cup macaroni pasta
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, sliced
  • 6 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic; sauté until fragrant and translucent.
  2. Add ground beef to the pot. Cook until browned, breaking it apart as it cooks.
  3. Stir in sliced carrots and celery; cook for 5 minutes until slightly softened.
  4. Add beef broth, diced tomatoes, dried basil, and oregano. Stir well and bring to a boil.
  5. Reduce heat to low and simmer for 15 minutes.
  6. Add macaroni pasta to the soup and cook until tender, about 8-10 minutes.
  7. Season with salt and pepper to taste. Serve hot.

Notes

For extra flavor, garnish with freshly chopped parsley or a sprinkle of grated Parmesan cheese before serving.
