Banana Nut Bagels

Deliciously soft and chewy banana nut bagels made with ripe bananas and crunchy walnuts, perfect for a wholesome breakfast or snack.

  • 2 ripe bananas, mashed
  • 3 ½ cups all-purpose flour
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 ½ tbsp sugar
  • 1 tsp salt
  • 1 cup warm water (110°F)
  • ½ cup chopped walnuts
  • 1 tbsp vegetable oil (for greasing)
  • 1 egg white (for egg wash)

Instructions

  1. In a small bowl, dissolve yeast and 1 tbsp sugar in warm water. Let sit for 5-10 minutes until foamy.
  2. In a large mixing bowl, combine mashed bananas, flour, salt, and chopped walnuts.
  3. Add the yeast mixture to the dry ingredients and mix to form a dough.
  4. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
  6. Preheat the oven to 425°F (220°C). Bring a large pot of water to a boil.
  7. Divide the dough into 8 equal pieces and shape each into a ball. Poke a hole through the center of each ball to form bagels.
  8. Boil each bagel in the water for 1-2 minutes per side, then place on a baking sheet lined with parchment paper.
  9. Brush each bagel with egg white for a shiny finish.
  10. Bake for 20-25 minutes or until golden brown.
  11. Remove from oven and cool on a wire rack before serving.

Notes

For extra flavor, sprinkle cinnamon or nutmeg into the dough or top bagels with additional chopped walnuts before baking.
