This Bacon Cornbread Stuffing is a flavorful and comforting side dish, perfect for holidays or any time you crave a savory, smoky indulgence. The combination of crispy bacon and sweet cornbread creates a delightful texture and taste that will impress your guests.

  • 1 pound bacon, diced
  • 1 large onion, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 8 cups crumbled cornbread (about 1 day old)
  • 6 cups cubed white bread (about 1 day old)
  • 2 cups chicken broth
  • 1/2 cup melted butter
  • 2 large eggs, beaten

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside, reserving 2 tablespoons of bacon fat in the skillet.
  3. Add onion and celery to the skillet with the bacon fat and cook until softened, about 5-7 minutes. Stir in sage, thyme, and pepper.
  4. In a large bowl, combine crumbled cornbread and cubed white bread.
  5. Add the cooked onion and celery mixture, and cooked bacon to the bread mixture.
  6. In a separate bowl, whisk together chicken broth, melted butter, and beaten eggs.
  7. Pour the liquid mixture over the bread mixture and toss gently to combine.
  8. Transfer the stuffing to a greased 9×13 inch baking dish.
  9. Bake for 30-35 minutes, or until golden brown and heated through.

Notes

For an extra layer of flavor, try adding some chopped apples or cranberries to the stuffing before baking. Serve warm as a side dish.
