This creamy Avocado Pasta Salad is a quick and easy meal perfect for lunch or a light dinner. Tossed with fresh avocado, lime juice, and your favorite veggies, it’s a flavorful and refreshing dish that comes together in minutes.

  • 8 ounces pasta (rotini, penne, or farfalle)
  • 2 ripe avocados, pitted and diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine diced avocado, red onion, cherry tomatoes, and cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, minced garlic, salt, and pepper.
  4. Pour the avocado mixture over the cooked pasta and toss gently to combine.
  5. Add the lime dressing and toss again until the pasta is well coated.
  6. Serve immediately or chill for later.

Notes

For an extra protein boost, add grilled chicken or shrimp to this salad. You can also substitute Greek yogurt for some of the avocado for a lighter version.
