Artichoke Sandwich

A delicious and hearty Artichoke Sandwich featuring tender artichoke hearts, fresh greens, and a zesty spread, perfect for a quick and satisfying meal.

  • 4 slices of whole grain bread
  • 1 cup marinated artichoke hearts, drained and chopped
  • 2 tablespoons mayonnaise
  • 1 teaspoon lemon juice
  • 1 garlic clove, minced
  • 1/4 cup shredded mozzarella cheese
  • 1/2 cup fresh spinach leaves
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a small bowl, mix mayonnaise, lemon juice, and minced garlic to create a flavorful spread.
  2. Spread the mixture evenly on two slices of bread.
  3. Layer the chopped artichoke hearts over the spread.
  4. Sprinkle shredded mozzarella cheese on top of the artichokes.
  5. Add fresh spinach leaves over the cheese layer.
  6. Top with the remaining bread slices to form sandwiches.
  7. Heat olive oil in a skillet over medium heat.
  8. Place sandwiches in the skillet and cook for 3-4 minutes on each side, or until bread is toasted and cheese is melted.
  9. Remove from heat, slice in half, and serve warm.

Notes

For an extra kick, add a few slices of roasted red pepper or a drizzle of balsamic glaze before serving.
