Homemade Apple Cider Whoopie Pies

These Apple Cider Whoopie Pies are soft, spiced cake-like cookies filled with a creamy, dreamy apple cider buttercream. They’re the perfect fall treat to enjoy with a cup of coffee or as a festive dessert!

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup apple cider, reduced to 1/4 cup (apple cider reduction)

For the Apple Cider Buttercream:

  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup apple cider reduction
  • 2 tablespoons milk or cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the apple cider reduction, beginning and ending with the dry ingredients. Mix until just combined.
  5. Drop by rounded tablespoons onto prepared baking sheets.
  6. Bake for 10-12 minutes, or until the edges are lightly golden. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  7. Make the Buttercream: In a large bowl, cream together butter and powdered sugar until light and fluffy. Beat in apple cider reduction, milk or cream, and vanilla extract until smooth.
  8. Once the cakes are completely cool, spread a generous amount of buttercream on the flat side of one cake and top with another cake to form a sandwich.
  9. Repeat with remaining cakes and buttercream.

Notes

For an extra touch, dust the whoopie pies with powdered sugar before serving.
