Apple Cider Cookies

Delightfully soft and spiced Apple Cider Cookies infused with warm fall flavors, perfect for cozy afternoons or festive gatherings.

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup apple cider
  • 1 tablespoon lemon juice
  • 1 teaspoon apple cider vinegar
  • Optional: ½ cup chopped walnuts or pecans

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a large bowl, cream the softened butter with granulated and brown sugars until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. In a small bowl, mix apple cider, lemon juice, and apple cider vinegar.
  6. Alternately add the dry ingredients and apple cider mixture to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
  7. Fold in the optional nuts if using.
  8. Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
  9. Bake for 10-12 minutes or until edges are lightly golden and centers are set.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra flavor, drizzle the cooled cookies with a simple glaze made from powdered sugar and apple cider, or serve alongside a warm cup of tea or cider.
