  • ½ cup heavy cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • For the Cinnamon Oat Topping:
  • ½ cup all-purpose flour
  • ½ cup rolled oats
  • ½ cup packed brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ⅓ cup ( stick) cold unsalted butter, cut into cubes

Instructions

  1. Prepare the Crust: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add the ice water, mixing until the dough just comes together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat and Roll: Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out the dough to a 12-inch circle. Transfer to a 9-inch pie plate and crimp the edges.
  3. Prepare the Filling: In a medium bowl, whisk together the apple butter, heavy cream, eggs, vanilla extract, cinnamon, and nutmeg until smooth.
  4. Prepare the Topping: In a separate bowl, combine the flour, oats, brown sugar, cinnamon, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Assemble and Bake: Pour the apple butter filling into the prepared pie crust. Sprinkle the cinnamon oat topping evenly over the filling.
  6. Bake for 45-50 minutes, or until the crust is golden brown and the filling is set. If the topping starts to brown too quickly, tent the pie with foil during the last 15 minutes of baking.
  7. Cool and Serve: Let the pie cool completely on a wire rack before slicing and serving.
