Almond Cherry Cookies

These Almond Cherry Cookies are a delightful treat, bursting with almond flavor and studded with sweet, chewy cherries. Perfect for a satisfying snack or a special occasion.

  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon almond extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup dried cherries, chopped
  • 1/2 cup sliced almonds

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and almond extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the chopped dried cherries and sliced almonds.
  7. Drop by rounded tablespoons onto ungreased baking sheets.
  8. Bake for 9-11 minutes, or until edges are lightly golden brown.
  9. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

For a richer flavor, toast the sliced almonds before adding them to the dough. Serve with a glass of milk or a cup of coffee.
