African Peanut Soup

A rich and creamy West African-inspired peanut soup that blends savory peanuts and aromatic spices into a comforting, hearty dish perfect for any season.

  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 medium sweet potato, peeled and diced
  • 1 red bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup natural peanut butter
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 2 cups chopped kale or spinach
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic and ginger and cook for another 1-2 minutes until fragrant.
  3. Stir in the sweet potato and red bell pepper, cooking for 3-4 minutes.
  4. Add the diced tomatoes, vegetable broth, smoked paprika, and cayenne pepper if using. Bring to a boil, then reduce heat and simmer for 20 minutes until the sweet potatoes are tender.
  5. Whisk the peanut butter into the soup until fully combined and creamy.
  6. Add the chopped kale or spinach and cook for another 5 minutes until greens are wilted.
  7. Season with salt and black pepper to taste.
  8. Ladle soup into bowls and garnish with fresh cilantro before serving.

Notes

For a creamier texture, blend part of the soup before adding the greens. Serve with crusty bread or over cooked rice for a more filling meal.
